Assured Food Safety Management System
(Due Diligence)

All food businesses have a responsibility by law to ensure that the food that they prepare and sell is safe to eat. We have put everything you need to know into our Food Safety Management System (we call this our Due Diligence system). We publish codes of practice because we are serious about raising standards within our industry.

Codes of practice are sets of guidelines based on current legislation and best practice. 

Daily recording diary

A Daily recording diary is used to record the businesses implementation of the NCASS Due Diligence System including:

  • Arrangements for the business
  • Supplier Lists
  • Cleaning records including chemicals used and cloth use rules
  • Food handler training
  • Critical Control Points and critical limits
  • Daily opening and closing checks
  • Delivery checks
  • Daily temperature checks
  • Weekly and monthly checks
Delivery Checklists

Delivery checks ensure that food deliveries are assessed before they are accepted. Checks include visual checks for damage and temperature checks on temperature sensitive items

Cleaning Schedule / COSHH

All work areas, including surfaces and structures, must be kept clean. The level of cleaning required must be assessed by the responsible person and set out in  your cleaning schedule.
