Assured Food Safety Management System
(Due Diligence)

All food businesses have a responsibility by law to ensure that the food that they prepare and sell is safe to eat. We have put everything you need to know into our Food Safety Management System (we call this our Due Diligence system). This is some of what you can expect to find in your NCASS Due Diligence system:

Code of Practice

We publish codes of practice because we are serious about raising standards within our industry.

Codes of practice are sets of guidelines based on current legislation and best practice.

Daily recording diary

A Daily recording diary is used to record the businesses implementation of the NCASS Due Diligence System including:

  • Arrangements for the business
  • Supplier Lists
  • Cleaning records including chemicals used and cloth use rules
  • Food handler training
  • Critical Control Points and critical limits
  • Daily opening and closing checks
  • Delivery checks
  • Daily temperature checks
  • Weekly and monthly checks
Delivery Checklists

Delivery checks ensure that food deliveries are assessed before they are accepted. Checks include visual checks for damage and temperature checks on temperature sensitive items

Cleaning Schedule / COSHH

All work areas, including surfaces and structures, must be kept clean. The level of cleaning required must be assessed by the responsible person and set out in  your cleaning schedule.

Food Safety Risk Assessment

NCASS’ online Food Safety Risk Assessment tool allows you to carry out risk assessments for out for your business and processes.

Fire Risk Assessment

This is a Fire Risk Assessment for your premises or the site you are working from.

Health and Safety Risk Assessment

This assesses general Health & Safety across your business operation and premises.

Allergen Control System

It is critical to have processes to manage allergens. Food allergies are increasing and can have severe effects. Even tiny amounts of an allergen, when consumed by allergy sufferers, can result in serious health
problems including in some cases, death.

Complaints, Registers and Disclaimers

Our templates and recording diaries allow you to record and register complaints and useful disclaimers provide you with added assurance.

Training Management System

This allows you to keep records on and plan the training your business needs.

Pest Control Policies

Everything you need to ensure you have policies for pest control in place and that you are able to evidence this.

Online Risk Assessments

You are required to produce risk assessments for your business by law; our easy to use online system walks you through the process and creates your bespoke Food, Health & Safety and Fire Risk Assessments.

They can be accessed via and are stored within your Business Management Portal and can be edited in line with any changes you make in your business or processes at any time.

We’ve also put together an updated risk assessment for Non-Food Borne Viruses (e.g CV19) which identifies additional hazards specific to CV19 as well as thorough guidelines to follow in order to ensure you are trading safely during the pandemic.


Covid-19 Resources & Safety Training

It’s essential that whilst trading during the COVID-19 crisis you are fully compliant and are taking the right precautions to keep yourself, staff and customers safe. 

We’ve created a set of documents to enable our members to trade safely during this time, including a complete guide to pivoting your business to a delivery, collection or takeaway model, editable risk assessments, compliance statements and deep cleaning and safe deliveries guidance.

We also provide FREE Online Covid-19 Safety Training to all of our members. This was developed this alongside industry professionals, ensuring it’s in line with current coronavirus safety regulations and meets EHO expectations during inspections at your business.

We’re in a Primary Authority Partnership with Greenwich Borough Council. This means that you receive assured and tailored advice on meeting regulations. Our partnership ensures that you get it right at the outset and enables you to use our resources, advice & guidance with confidence. All of our documentation, advice and guidance is assured by a Government body and our FSMS, Risk Assessments, Training and all other documentation has been signed off as Assured Advice and Guidance.

This includes our Covid-19 Safety Training and certification scheme, developed alongside our lead EHO & food safety expert Jenny Morris MBE.
