Kate’s first introduction to hospitality was like many others — taking on part-time restaurant work while training as an actress at drama school. Her early career took her into the entertainment industry, working in PR on big-name television projects and with global musical artists. But after years in that fast-paced world, she began to crave something more grounded and creatively fulfilling.
Living in Norfolk after many years in London, Kate noticed how difficult it could be to find healthy, fresh food — especially for families with dietary restrictions. She began experimenting in her own kitchen, creating vibrant meals from scratch. When a neighbour complimented a poke bowl she’d made, a spark was lit. Soon after, she spotted a local market and decided to give it a go:
“I bought a £40 gazebo, got my food license, did some quick branding, and just went for it. I’m very much someone who believes in acting on good ideas — what’s the worst that can happen?”
That leap turned into Poke Nom — a colourful, health-conscious street food brand serving bold, nourishing dishes. Trading weekly at Holt Market throughout the summer of 2021, Kate found herself reconnecting with joy and purpose.
“It gave me such pride. It was healing. I absolutely loved it.”
From day one, Poke Nom has been a family effort. Kate’s young son — who came up with the name — is an enthusiastic part of the journey. His allergies have played a central role in shaping the business.
“We’d go to events and struggle to find anything safe for him to eat. I wanted to change that.”
Poke Nom operates a fully nut-free kitchen, with a menu built on accessibility and peace of mind. Many customers with allergies now actively seek them out at events, knowing they can finally enjoy delicious food without worry.
Keen to learn more about the industry, Kate joined the KERB InKERBator program — an experience that brought both insight and challenge. During one London stint, she slipped on ice while carrying equipment and fractured three ribs and her sternum.
“It was painful, but I didn’t want to lose the momentum. After two days in bed, I was back on site. You do what you’ve got to do.”
That grit and dedication has defined Kate’s journey. Since then, she’s landed pitches at major events — including Glastonbury on her very first application — and has traded at some of the UK’s most popular festivals. Along the way, she’s grown a loyal following and developed a business that adapts to its environment. From sports events to music festivals, Kate tailors her menu and messaging to the audience, whether that means streamlining for efficiency or highlighting protein content for a health-conscious crowd.
Her theatrical background continues to shape her work.
“I think of it like acting or drama. Hospitality has so much in common — it’s about presence, improvisation, and connection. You’ve got to read the room, roll with the punches, and put on a show.”
Whether it’s branding a unit to stand out or chatting to customers with confidence, Kate treats each pitch like a stage and the food as the star of the show.
Improvisation, resilience, and adaptability are baked into Poke Nom’s DNA. Every event brings new challenges — weather, equipment, footfall, dietary trends — and Kate meets each one head-on with creativity and care.
“You’re not always going to get it right, but if someone makes a suggestion or asks for something new, I listen. Then I go back, think about it, and work out how we can make it happen.”
She’s passionate about showcasing how allergen-aware, inclusive food doesn’t need to compromise on flavour or fun. Every poke bowl is built with intention — from the warm rice base to the homemade sauces and fresh toppings.
“It’s not just a salad in a bowl. It’s got crunch, sweetness, protein, colour — there’s a whole story in every dish.”
What started as a simple idea has grown into a thriving food brand with a loyal following and a clear mission: to serve nourishing, safe, and seriously tasty food — made with love, purpose, and heart. In a short space of time, Poke Nom has proven itself a force within independent hospitality — a story of resilience, adaptability, and care packed into every colourful bowl. It’s a reminder that when you lead with passion and stay open to growth, anything is possible. You really do get out what you put in — and for the ever-determined Kate, the sky’s the limit.
